If you’re looking to impress your group of friends with some serious steaks this summer, the success of your endeavor comes down to the quality of the cuts of meat and the way you prepare them. Of course a filet mignon is always going to be a good cut of meat, but if you prepare it incorrectly it could still be dry and lacking the full flavor that this meat is known for. Other alternatives such as bison burgers can be equally exciting to the guests you’re feeding, and if cooked correctly they will taste exceptional. Basically, it’s all about finding the happy medium between a quality piece of meat and a cooking technique that heats it to perfection.
When you’re looking for an extremely high quality cut such as a filet mignon, you always want to look for a USDA Prime cut if possible. This is the most expensive and sought after cut of meat, though, and it may not be within your budget or possible to find it. In that case, steaks that are listed as US Choice are the next best things. These will also be full of fat that is marbled throughout the juicy red meat. US Select, which is the most common grade of meat found in grocery stores, is not as fatty or juicy and is not the best choice if possible.
Whether you are cooking bison burgers or prime cuts of beef, the method of cooking is vitally important. It is best to get the cooking surface extremely hot, which takes about 15 minutes on a grill. The meat should also be salted, and if it’s a steak it should be left with the salt coating for 30 to 60 minutes depending on the thickness on the meat. This will draw out some excess moisture and soak in a bit of salt to enhance the flavor and promote the flow of juicy fat once the steak gets cooking. Steaks should also be at room temperature before putting them on the grill, so they will sear as quickly as possible without overcooking the tender meat inside.
A good cut of meat, whether it is a filet mignon from a fine restaurant or a US Choice cut from the grocery store, shouldn’t need a bunch of marinades and extra fuss. All it needs is some salt and pepper, and a good cooking technique.
